Games that use dice and the dice themselves date all the way back to the Middle Eastern Crusades, but modern craps is just about 100 years old. Current craps developed from the 12th Century Anglo game called Hazard. Nobody absolutely knows the birth of the game, however Hazard is said to have been created by the Anglo, Sir William of Tyre, around the twelfth century. It is theorized that Sir William’s soldiers wagered on Hazard during a blockade on the citadel Hazarth in 1125 AD. The title Hazard was acquired from the fortification’s name.
Early French settlers imported the game Hazard to Canada. In the 18th century, when displaced by the English, the French headed down south and found refuge in southern Louisiana where they a while later became known as Cajuns. When they were driven out of Acadia, they took their favored game, Hazard, with them. The Cajuns broke down the game and made it mathematically fair. It’s said that the Cajuns adjusted the name to craps, which was acquired from the term for the non-winning throw of 2 in the game of Hazard, known as "crabs."
From Louisiana, the game extended to the Mississippi river boats and throughout the country. A few acknowledge the dice maker John H. Winn as the father of current craps. In the early 1900s, Winn created the modern craps setup. He created the Do not Pass line so gamblers can bet on the dice to not win. Afterwords, he invented the boxes for Place wagers and added the Big 6, Big 8, and Hardways.
